Manual harvest in boxes of 12 kg.

Elaboration

After destemming, pre-fermentation maceration begins for 5 days. Alcoholic fermentation is initiated in stainless steel tanks at controlled temperature, with daily pump-overs and mid-fermentation délestages for a period of 20 days, after which we finish with a post-fermentation maceration of 5 days before racking.

Tasting note

Red garnet-colored wine, with a medium layer and a cherry red rim.
Intense aroma of ripe black fruit (plums, blackberries) complemented by clear notes of roasting (Toffee - Chocolate) and spices.
The entry on the palate is fresh and inviting to drink. Its passage is almost sweet and unctuous with mature and sweet tannins.
In the finish, it leaves us with sensations of ripe fruit and Mediterranean herbs.
