Manual grape harvest in 12-kilogram boxes.

Elaboration

The grapes are cooled for 12 hours in a cold storage room. Each vineyard is vinified separately. Fermentation at controlled temperature with periodic pumping over and delestage. Only the free-run wine is used to fill the French oak barrels. After 12 months of aging, the best barrels from Ses Nines are selected and a blend is made for the selection 07/9.

Tasting note

Medium-high layer garnet wine with a purple rim.
The nose is intense with aromas of red fruit liqueur and balsamic notes.
On the palate, it has medium acidity, integrated alcohol, and very ripe tannins. In the aftertaste, ripe red fruit and spices appear.
