Hand-harvesting of the 1,100 vines planted in the organic estate of Son Boi.

Elaboration

After destemming, the must is fermented with its skins in new French oak barrels of 500 liters, with the lid open. Pre-fermentation maceration for 5 days. Manual punch-downs daily during the 20-day fermentation period. Post-fermentation maceration for 5 days before racking. Aging is done in second-year 500-liter barrels, and the wine remains in them until Patrick Paulen and the technical team decide to transfer them to stainless steel. The wine is not clarified or filtered.

Tasting note

Ruby red wine with a medium layer.
Intense aroma with very typical vegetal notes of the variety, red fruit with a balsamic background.
On the palate, it shows the structure of this variety in a perfect harvest. Elegant entry with a perfect balance between acidity and alcohol. Medium-long aftertaste with balsamic memories.
