Quattuor Insulae is the result of a meticulous exploration of exceptional vineyards on our island, where only four (4) indigenous varieties are selected: Callet, Manto Negro, Gorgollassa, and Escursac, all cultivated in different strategic locations.

Harvesting is entirely manual in 12 to 15-kilogram boxes. Each variety is harvested at its optimal state in the first week of September.
The 4 grapes from the 4 plots are processed simultaneously. Destemming and pre-fermentative maceration for 3 days. Co-fermentation at controlled temperature with daily pumpovers and 2 délestages during fermentation. Malolactic fermentation in concrete tanks and French oak barrels. Aging: 9 months in concrete tanks, 500-liter and 225-liter barrels.
Tasting note

Visual phase: medium-intensity garnet red color with ruby reflections. Clean olfactory phase with medium intensity, highlighting its complexity. Aromas of ripe red fruit (strawberries and currants), notes of red licorice, dry Mediterranean herbs, subtle sensations of sweet spices, vanilla, and cloves.

In the mouth, it has a very smooth attack with medium acidity. Discreet but mature tannins fused into a glyceric structure. Integrated alcohol and a very long and persistent aftertaste, where the sensation of ripe red fruit and herbs reappears.

In summary, it is defined as a wine with great Mediterranean character and Mallorcan identity. Local grapes, combined with respectful aging, give it a 100% Mallorcan style.
