Completely manual in boxes of 12 to 15 kilos, starting from the first week of September.

Elaboration

"After destemming, pre-fermentation maceration begins for 5 days. Alcoholic fermentation is initiated with daily pump-overs for a period of 20 days, after which we finish with a post-fermentation maceration of 5 days before racking. Aging: 7 months in French oak barrels of 225 L. and 500 L., of which 20% are new and the rest are from the second year."

Tasting note

Medium-layered garnet color with a cherry red rim. Clean and bright. In aroma, floral and ripe plum notes stand out with subtle hints of cinnamon. The attack on the palate is smooth with a wide and luscious passage. The finish has a certain freshness and delicate balsamic notes.
