Vintage

The harvest is done manually with Manto Negro grapes from the ecological estate of Son Boi. The grapes remain in a cold chamber for 12 hours before processing.

Elaboration

The stems are removed and the grapes are taken to stainless steel tanks. It is a rosé made by the bleeding technique: the must remains in cold contact with the skins for several hours until they are separated and the must is then processed as a white wine. After fermentation at controlled temperature, half of the wine will remain for two months in concrete eggs with its lees.

Tasting note

Pale salmon color.
Aromatically very delicate with notes of pomegranate and vineyard peach.
The palate is wide and luscious. Very fruity and fatty finish.
