Research and development in wine

R&D

In the winery we combine the highest technology with simple production processes that respect the grape-must-wine trinomial. For this reason we stabilise the temperature of the harvested grapes with cold, we have computerised fermentation control with refrigeration equipment, the fermentations are microbiologically controlled, we carry out exhaustive analytical monitoring with an internal laboratory run by specialised personnel. Our analytical control is based mainly on: must analysis, phenolic maturation index, wine analysis, microbiological analysis, barrel and cork analysis (TCA, TeCA, PCA…).

Research and Development

At Celler Tianna Negre we are convinced that, in addition to respect for our winemaking tradition, research, development and innovation in the world of wine are of great importance due to the great improvement that this brings to the final product. For this reason, we work on R&D and quality in all aspects of the winemaking process.

Our philosophy tells us that the quality of wines does not only lie in the winery, but begins in the vineyard and ends with its presentation for marketing.

That is why, at our company, we are committed to quality and sustainable viticulture, taking care of our vineyards so that each of the varieties expresses its greatest oenological potential. We work throughout the year to ensure a healthy harvest with a homogeneous ripening. During the vegetative cycle of the vine, controls and analyses are carried out to monitor the vineyard to adapt the work to the desired objectives. We carry out a manual harvest with selection in 15 kg boxes to maintain the highest quality of the grapes.

Vineyards

We are committed to the recovery of our native varieties that disappeared due to the phylloxera plague at the end of the 19th century. For this reason, we have planted experimental vineyards on our farms and we collaborate with the “Institut de Recerca i Formació Agrària” of the Balearic Government. We were the driving forces behind the recovery of the Giró ros and currently we have: Escursac, Galmater, Mandó, Esperó de Gall, Gafarró, Quigat, Argamussa, Valent negre, Valent blanc, Callet blanc and Vinater blanc, Giró negre, Batista (red), Callet de Cas Concos (red), Fogoneu Francés (red) and Tibbus manses (white).

Furthermore, we are committed to viticulture that respects the ecosystem in which it lives and that is why we have taken a further step in our respect for the natural environment with the intention of producing organic wines. Thus, since 2013 we have been committed to organic vineyards, with a total of 2020 hectares in 55, where we work with local varieties such as Manto negro, the Callet, the Gorgollasa, the Escursac, the Giró ros and Prensal blanc.

Winery

In each harvest we devote part of our efforts to experimenting with different fermentation, production and oak aging processes with our local varieties to observe how it affects the final wines. The results of these processes gave rise to our TN5 range of wines, through which we make the results known to the consumer.

At each harvest we use the stems to make compost for crops.

Designer

On Celler Tianna Negre We believe in the symbiosis between the world of art and wine.

Wine is culture and art, a sensory experience in itself and that is why we cannot forget the way it is presented to us, which is why we try to take care of, pamper and innovate that final part which is the bottle, the label and the packaging.

We work on developing the image of each product, from the initial idea to the final phase.
