Hand-picked from the 1.100 vines planted on the organic farm of Son Boi. 
Crafting
After destemming, the must is fermented on its skins in new 500-litre French oak barrels with an open top. Pre-fermentation maceration lasts for 5 days. Manual punch-downs are carried out daily during the 20-day fermentation period. Post-fermentation maceration lasts for 5 days before devatting. The wine is aged in 500-litre second-year barrels and remains in them until Patrick Paulen and the technical team decide to rack them into stainless steel. The wine is not clarified or filtered.
Tasting Notes

Ruby red wine with a medium depth. Aroma of medium intensity, very delicate with notes of ripe plum, very typical of the variety, with a spicy background. On the palate it is silky with ripe tannins, with an elegant mid-palate. Long and balanced aftertaste.
