Wine harvest
Entirely hand-picked in 12-15 kilo boxes. Each variety is harvested at its optimal state during the first week of September.
Crafting
The 4 grapes from the 4 plots are processed at the same time. Destemming and pre-fermentation maceration for 3 days. Co-fermentation at controlled temperature with daily pumping over and 2 delestages during fermentation. Malolactic fermentation in concrete tanks and French oak barrels. Ageing: 9 months in concrete tanks, 500-litre and 225-litre barrels.
Tasting Notes

In appearance, it displays a medium-intensity garnet red color with ruby ​​highlights. The nose is clean and of medium intensity, highlighting its complexity. Aromas of ripe red fruit (strawberry and currants), notes of red licorice, dried Mediterranean herbs, subtle hints of sweet spices, vanilla, and clove.

On the palate it has a very smooth attack with medium acidity. Discreet tannins, but ripe and blended in a glyceric structure. Integrated alcohol and a very long and persistent aftertaste, where the sensation of ripe red fruit and herbs reappears.
